I always have such mixed feelings about the kids going back to school. On the one hand I am thrilled to get back on a schedule, to reclaim a little quiet time and start dreaming of cooler fall days. On the other hand, I really enjoyed living without a schedule, sleeping in, and making popsicles and ice cream cones a regular part of our meal plan.
The kids usually have some mixed feelings, too. They’re excited to get back to seeing their friends and get swept up in the anticipation of the new year, new teachers, and new routines. However, there’s no denying that they loved a complete lack of bedtime and swimming long past sundown.
I like to send them off to school with full stomachs so they can focus on the day, but I have no interest in spending all morning in the kitchen. For our first back to school breakfast we made a fun twist on strawberry shortcake using some breakfast favorites.
We start with Eggo waffles, which hilariously my daughter begged for after my husband made homemade waffles for breakfast one morning. “Daddy, can we please have the circle waffles next time?” Done! I sliced strawberries and used some strawberry greek yogurt for the filling, although you could use the yogurt or whipped topping of your choice.
I think it’s fun to let the kids put their own breakfast together. We find that anytime they can take part in the prep, even a small part, they are much more invested in eating that meal.
After school calls for a schedule around here as well. My son is in fourth grade and he has a TON of homework, which requires a quiet work space. I like to come up with independent activities for my daughter to keep her happy and occupied while he works. We downloaded and printed this Eggo activity booklet for her to use in her room. We love this partnership between Eggo and Crayola to bring both fun and deliciousness to the table for mind and body as we go back to school.
Over the summer we added a desk to her room and she loves working up there. We stocked her space with some new Crayola coloring supplies, made her promise she would color on paper and only on paper, and she went to town.
