I think we’ve reached the point in the summer where I’m not entirely sure what day of the week it is. Just this morning, I looked at my husband and asked if today is Monday. “I think so?” was his response. I love the laziness of the middle of summer where we’re so totally into the lack of schedule that we can’t be bothered with knowing what day it is, or if the kids have showered (does swimming count?)
Another part of summer that I’m loving is our weekly Facebook live episodes on UPtv. We have been having so much fun working on this series of videos and playing around more on Facebook live.

Back to UPtv and Date My Dad! Last week while we talked about our favorite Date My Dad episode up to this point while making Whoopie Pies, which are one of my favorite desserts. Is that weird? They’re like a hybrid cookie/cupcake and I have a recipe for a really easy version of these yummy cookies.

Easy Whoopie Pies Recipe
Cookie
1 box any flavor cake mix
1/2 c. oil
2 eggs
Combine all ingredients and scoop 1 inch cookies balls of dough onto a cookie sheet. Bake at 350 degrees for ten minutes or until cooked through. Cool completely
Filling
1/2 c. butter
1/2 package cream cheese
1/2 jar marshmallow fluff
Beat butter and cream cheese until fluffy. Fold in marshmallow fluff. Spread filling between two cooled cookies and enjoy! Refrigerate any uneaten cookies to keep the filling fresh.
