In the summer I love having extra time to try new recipes. However, I don’t love recipes that are going to keep me in the kitchen all day! That’s why we love shortcut recipes like these easy whoopie pies!
I think we’ve reached the point in the summer where I’m not entirely sure what day of the week it is. Just this morning, I looked at my husband and asked if today is Monday. “I think so?” was his response. I love the laziness of the middle of summer where we’re so totally into the lack of schedule that we can’t be bothered with knowing what day it is, or if the kids have showered (does swimming count?)
Back to whoopie pies. We love rounding our our summer evenings with a dessert, but even I get tired of ice cream sandwiches and popsicles.
These whoopie pies are a crows pleaser because you can make any flavor you like! As long as a box cake mix exists in that flavor, you can have a whoopie pie!

Easy Whoopie Pies
Ingredients
Cookie
- 1 box any flavor cake mix
- 1/2 c. oil
- 2 eggs
Filling
- 1/2 c. butter
- 1/2 brick cream cheese
- 1/2 jar marshmallow fluff
Instructions
- Combine all cookie ingredients
- Scoop 1 inch balls of dough onto cookie sheet
- Bake at 350 degrees for 10 minutes or until cooked through
- Cool completely
- Prepare the filling
- Beat butter and cream cheese until fluffy
- Fold in marshmallow fluff
- Spread filling between two cookies
- Refrigerate any cookies not consumed immediately to keep filling fresh
