Summertime means simple, almost bake-free desserts. If you’re looking to elevate the basic summer s’more (no shade, we love a gooey s’more), we’ve got what we think are the best easy summer desserts for you to try.
A few summers ago when we were working with UPtv to promote their comedy Date My Dad, we shared a few of our favorite easy summer desserts that were perfect for a Friday night in with the family.
It seems though that nights in with the family are few and far between these days. Either we’re hosting neighbors for an outdoor movie night or we’re headed to someone else’s for a BBQ or get together.
It’s great to have a go-to summer dessert you can whip up in a hurry to either serve at your home or to take to a potluck. Here are a few of five of our favorite easy summer desserts.

Twix Caramelita Bars from It’s a Keeper
These are probably the most labor intensive of all of the desserts we’re listing here, so I’ll put them at the top. I love a bar cookie because it’s so much easier to press things into a pan than to scoop out dozens of cookies, so these get simplicity points for that! Plus the oatmeal, caramel, chocolate combo has my mouth WATERING.
Easy Blueberry Crunch Dump Cake from Home Cooking Memories
I love the blueberry twist on this dessert, which makes it a perfect summer treat and easy as, well, cake.
Easy Lemon Bars from The Slow Roasted Italian
I LOVE lemon bars, but never make them myself. I think that’s about to change.
Pineapple Chipotle Popsicles from Home Cooking Memories
Is this cheating? I don’t care because these sound amazing, and with only three ingredients they definitely fall into the “easy” category.
No-Bake Coffee Cheesecakes
You’ll need to break out the mixer for this one, but there’s no baking required so you can stay cool!
