I honestly can’t remember feeling as excited about a brand new year as I do about this year. I’ve got a brand new notebook and new pens and I’m making lists and plans and even considering choosing a word for the year, which is so far outside of my personality that I’m not sure what’s happening.
Save Time and Money Meal Planning!
One of my personal goals for the new year is to get even better at planning our weekly menus. This month, as we ease back into our routine and life gets busy all over again, I’m looking for simple but hearty meals that I can prep in the morning and enjoy in the evening.
Enter, the slow-cooker! (If you’re looking for a slow-cooker, I like this one from Crock Pot a lot.)
Easy Slow Cooker Recipes for Fall and Winter
Here are seven tried and true recipes that I will be turning to this month to keep everyone fed and happy.
Slow Cooker Split Pea Soup – This isn’t much to look at, as is the case with many slow-cooker meals, but it is simple and delicious. It’s the perfect way to use up some leftover holiday ham.
Beef Barley Soup – The hardest part about this recipe is finding barley in your grocery store. After that, it’s aces.
Slow Cooker Enchilada Quinoa – I find that ofter a lot of slow-cooker recipes start to taste the same. I love the Mexican flavors of this one to help it stand out.
Slow Cooker Chicken and Corn Chowder – This one is a family favorite! I think we might need to make this one first.
Slow Cooker Baked Ziti – Pasta in a crock pot sounds impossible, but it’s not and it makes this already simple dish even easier!
Dr. Pepper Pulled Pork – This is a favorite for big game Sunday. I make a giant pot of this and a million sides and it feeds a crowd.
Red Beans and Rice with Chicken Sausage – Okay, now I’m not sure which to make first as I also really love this recipe. This is the recipe that makes me so happy to own a rice cooker.
